Blackened snapper
 
 
Ingredients:
This is one of my favorites, and I don't like fish very well.
2 tbsp paprika
2 tsp cayenne pepper
3 tsp ground black
1 tsp sea salt (optional)
2 tsp onion powder
2 tsp garlic powder
1 tsp crushed dried oregano
1 tsp dried thyme
1 tsp dried parsley
4 red snapper fillets or samlon
1 1/2 c clarified butter, melted (recipe here)
 
 
Instructions:
1. Mix all seasonings together. Heat a large cast iron skillet over high heat 5-8 minutes, or until extremely hot. Dip fish into melted butter, and sprinkle each fillet with the seasoning mixture, coating heavily. Pour 1 tablespoon of butter over each fillet. Cook until coating turns black, 3 to 5 minutes. Turn fish over and pour another tablespoon of butter over the fish. Cook for 2 minutes longer.
