Chocolate Chip Cookie In A Cup


  • 1 tbsp vegan butter
  • 1 tbsp sugar
  • 1 tbsp firmly packed dark brown sugar
  • 3 drops vanilla extract
  • Small pinch kosher salt
  • Egg Replacer equal to 1 egg
  • Scant 1/4 C all purpose flour
  • 2 tbsp semi sweet chocolate chips


  1. Start by melting your butter in the microwave. Add sugars, vanilla and salt. Stir to combine. Add Egg Replacer egg. Stir to combine. Add flour, then stir again. Add the chocolate chips, and give a final stir. Cook in microwave 40-60 seconds, start checking for doneness at 40 seconds.

  2. Serve warm.
