Veggie Rice Stuffing

Vegetarian stuffing for side dish or for a wonderful way to stuff an entree.


  • 1 c brown rice
  • ¾ c dried cranberries
  • 1 tbsp vegan margarine
  • ¾ c onion, chopped
  • ¾ c celery, chopped
  • ½ c pecans, toasted and chopped
  • ¼ c parsley, chopped
  • ¾ tsp poultry seasoning
  • ¼ tsp pepper


  1. In a large skillet, melt margarine; saute onion and celery until tender.

  2. Add all ingredients to the inner pot of a rice cooker and stir to combine. Place inner pot in the rice cooker and close the lid. Press the White Rice button and cook until rice cooker switches to "Keep-Warm" mode. Allow rice to stand, covered, for 10 minutes. Adjust seasoning as desired. Pour into a serving bowl and serve immediately.
