Vegetarian stuffing for side dish or for a wonderful way to stuff an entree.
- 1 c brown rice
- ¾ c dried cranberries
- 1 tbsp vegan margarine
- ¾ c onion, chopped
- ¾ c celery, chopped
- ½ c pecans, toasted and chopped
- ¼ c parsley, chopped
- ¾ tsp poultry seasoning
- ¼ tsp pepper
In a large skillet, melt margarine; saute onion and celery until tender.
Add all ingredients to the inner pot of a rice cooker and stir to combine. Place inner pot in the rice cooker and close the lid. Press the White Rice button and cook until rice cooker switches to "Keep-Warm" mode. Allow rice to stand, covered, for 10 minutes. Adjust seasoning as desired. Pour into a serving bowl and serve immediately.
