All amounts are subject to your taste buds, weather, allergies, and what you have in the house at the moment.
- 6 ears of fresh corn
- 3 orange bell peppers
- 3 medium sized ripe tomatoes
- 1 med-large onion
- 3 cloves garlic
- olive oil
Clean off corn then grill or cook on a griddle. (This will give a yummy smoky flavor) Then allow to cool for handling.
Chop: peppers, tomatoes, onion and garlic. Place these in a large bowl.
Using a fork or a cob holder, hold the ear of corn upright. Slice off the kernels of corn. Do this to each of the ears. Add corn to bowl.
Add vinegar, olive oil, salt and pepper to taste. Stir well. Chill and serve cold.
