Breakfast Casserole

Yummy on a cold winter morning. Can be prepped the night before.

Ingredients

  • 4 eggs
  • 1 c. Bisquik
  • 1 c. milk
  • 1 c. shredded cheese
  • 4 precooked sausage patties, thawed & cut into small pieces
  • ¼ c. bell pepper (I used red but whatever)
  • ¼ c. spinach

Instructions

  1. Grease small baking dish (about 8x10 or equivalent). Preheat oven to 350*

  2. Beat 4 eggs in small mixing bowl.

  3. In larger bowl, combine milk & Bisquik til smooth. Add eggs, beat together until smooth.

  4. Add in veggies, cheese, sausage one at a time, beat until well mixed.

  5. Pour into baking dish. Bake for 35-40 minutes until fork comes out clean.
