Cold Veggie Soup for summer eating!
- 1c tomato, chopped
- ½ c cucumbers, chopped
- 1/2/ c green onion, finely chopped
- ¼ c Parsley, snipped ( I usually just dash some dried in instead of fresh)
- 1T soy sauce
- ½ tsp celery seed
- 2T lemon juice
- 1/4t garlic powder
- 1 zucchini, thinly sliced
- 3 c tomato juice
Combine and chill for 4 hours, serve.
