Gazpacho

Cold Veggie Soup for summer eating!

Ingredients

  • 1c tomato, chopped
  • ½ c cucumbers, chopped
  • 1/2/ c green onion, finely chopped
  • ¼ c Parsley, snipped ( I usually just dash some dried in instead of fresh)
  • 1T soy sauce
  • ½ tsp celery seed
  • 2T lemon juice
  • 1/4t garlic powder
  • 1 zucchini, thinly sliced
  • 3 c tomato juice

Instructions

  1. Combine and chill for 4 hours, serve.
