Warm, filling, relatively inexpensive
Ingredients
- 4-6 potatoes, cut up in 1/2" chunks
- half a bag of frozen carrots, or 3-4 carrots cut up, 1/2" chunks
- 2 c. chicken stock
- 1 ½ c. milk
- ½ c. cream
- ½ onion
- salt & parsley to taste
- 1 smoked sausage
Instructions
Boil potatoes & carrots until mostly tender, drain. In a large stock pot, simmer stock, milk, cream, onion & parsley. Add potatoes & carrots. Cut up a smoked sausage, add to soup. Simmer until onions are cooked, sausage is warm and potatoes & carrots are fully tender, about 10 minutes.
