Potato Soup

Warm, filling, relatively inexpensive

Ingredients

  • 4-6 potatoes, cut up in 1/2" chunks
  • half a bag of frozen carrots, or 3-4 carrots cut up, 1/2" chunks
  • 2 c. chicken stock
  • 1 ½ c. milk
  • ½ c. cream
  • ½ onion
  • salt & parsley to taste
  • 1 smoked sausage

Instructions

  1. Boil potatoes & carrots until mostly tender, drain. In a large stock pot, simmer stock, milk, cream, onion & parsley. Add potatoes & carrots. Cut up a smoked sausage, add to soup. Simmer until onions are cooked, sausage is warm and potatoes & carrots are fully tender, about 10 minutes.
