Summer Salad For Rth Recipe Swap!

This is my go-to salad. I've not been able to eat a lot lately, so I'm making what food I have count. I eat some variation on this at least once a day.

Ingredients

  • organic baby spinach
  • half an organic tomato
  • a carrot
  • scallions
  • edamame, 5-8 pods (shelled)
  • ¼ cucumber
  • ½ oz goat cheese

Instructions

  1. Chop everything into bite size peices.

  2. Toss everything in a bowl.

  3. Use dressing to taste. I like Paul Newman's Organic Italian.
