This is my go-to salad. I've not been able to eat a lot lately, so I'm making what food I have count. I eat some variation on this at least once a day.
Ingredients
- organic baby spinach
- half an organic tomato
- a carrot
- scallions
- edamame, 5-8 pods (shelled)
- ¼ cucumber
- ½ oz goat cheese
Instructions
Chop everything into bite size peices.
Toss everything in a bowl.
Use dressing to taste. I like Paul Newman's Organic Italian.
