Bright Spring Soup
small onion, cloves garlic, 1 Tbsp. olive oil, small cabbage, chopped, stalk celery, can garbanzo beans, drained, parsnip, peeled & chopped, box veggie broth, parsley, sea salt, pepper, lemon juice
Something bright and cheery for a cool and cloudy early spring day.

Emergency Soup
butter, olive oil, 2-3 leeks (the white parts only, sliced very thin), 2-3 potatoes, scrubbed, quartered and sliced thin., 2-3 carrots, sliced in half lengthwise, then chopped pretty fine., cloves garlic, minced., vegetable stock (If I don't have any, I cheat and use water and 2 veggie bouillon cubes.), can chick peas. (Rinsed), Parsley if you have it.
Vegetarian, vegan if you don't use butter.

Potato Soup
4-6 potatoes, cut up in 1/2" chunks, half a bag of frozen carrots, or 3-4 carrots cut up, 1/2" chunks, 2 c. chicken stock, c. milk, c. cream, onion, salt & parsley, smoked sausage
Warm, filling, relatively inexpensive

Blesssings Soup (Or Christmas Soup)
kielbasa, sliced 1/4 inch thick on bias; cut slices in half, Vegetable oil, as needed, Garlic, 6 cloves minced, dry red kidney beans, soaked at least 4 hours and up to overnight (best if done overnight; put in water, bring to boil, turn off heat, let set for 8-10 hours), chicken broth, red potatoes, cut into 1/2-inch cubes, fresh kale, approximately 4 handfuls, red wine vinegar, freshly ground black pepper

Pumpkin And Black Bean Soup
extra-virgin olive oil, 1 turn of the pan, medium onion, finely chopped, canned or packaged vegetable stock, found on soup aisle, can (14 1/2 ounces) diced tomatoes in juice, can (15 ounces 2 cups) black beans, drained, cans (15 ounces or 4 cups) pumpkin puree, heavy cream (I used dairy-free So Delicious Coconut Milk Creamer), curry powder, 1 palm full, ground cumin, 1/2 palm full, cayenne pepper, eyeball it in the palm of your hand, Coarse salt, blades fresh chives, chopped or snipped, for garnish

Chicken Noodle Soup
3.5 cups vegetable broth, Generous dash of pepper, medium carrot, sliced, stalk celery, sliced, medium egg noodles, cubed cooked chicken or canned chicken
Quick and easy. A good use for leftover chicken.

Sweet And Sour Cabbage Soup
- 1 lb ground beef, med onion, S&P, of a head of cabbage chopped or grated, rice, water (or enough to slightly cover the cabbage), 1- 1L can of low salt tomato juice, 2tsp Worcestershire sauce, brown sugar, lemon juice, chicken soup base powder
