vegetable broth, extra-virgin olive oil (EVOO), small onion, finely chopped, cloves garlic, grated or finely chopped, arborio rice, dry white wine, One 12-ounce box frozen butternut squash puree, thawed, Nutmeg, Salt and pepper, Daiya shredded mozzarella, margarine, cut into small pieces, leaves fresh sage, slivered

Emergency Soup
butter, olive oil, 2-3 leeks (the white parts only, sliced very thin), 2-3 potatoes, scrubbed, quartered and sliced thin., 2-3 carrots, sliced in half lengthwise, then chopped pretty fine., cloves garlic, minced., vegetable stock (If I don't have any, I cheat and use water and 2 veggie bouillon cubes.), can chick peas. (Rinsed), Parsley if you have it.
Vegetarian, vegan if you don't use butter.

Patatas Bravas
5 lbs. potatoes, cut into rough chunks (I used Yukon Gold), extra virgin olive oil, Kosher salt, Fresh black pepper, 1 tsp. each: paprika, parsley
I love this dish as it is, but I also sometimes make the sauces on their own, to serve with pasta.

1c tomato, chopped, cucumbers, chopped, 1/2/ c green onion, finely chopped, Parsley, snipped ( I usually just dash some dried in instead of fresh), 1T soy sauce, celery seed, 2T lemon juice, 1/4t garlic powder, 1 zucchini, thinly sliced, tomato juice

Vegan Pumpkin Baked Ziti
fake sweet Italian sausage (I use Gimme Lean Sausage from Lightlife), minced garlic, red pepper flakes, oil, 1 (15-ounces) can pumpkin puree (or cook and puree fresh pumpkin if you have it in season), vegetable stock, chopped fresh sage leaves, salt, heavy cream (I use So Delicious Coconut Creamer), whole wheat ziti pasta, cooked, chopped fresh parsley leaves, faux mozzarella (I use Daiya)

extra-virgin olive oil, 1 turn of the pan, medium onion, finely chopped, canned or packaged vegetable stock, found on soup aisle, can (14 1/2 ounces) diced tomatoes in juice, can (15 ounces 2 cups) black beans, drained, cans (15 ounces or 4 cups) pumpkin puree, heavy cream (I used dairy-free So Delicious Coconut Milk Creamer), curry powder, 1 palm full, ground cumin, 1/2 palm full, cayenne pepper, eyeball it in the palm of your hand, Coarse salt, blades fresh chives, chopped or snipped, for garnish
