Emergency Soup
butter, olive oil, 2-3 leeks (the white parts only, sliced very thin), 2-3 potatoes, scrubbed, quartered and sliced thin., 2-3 carrots, sliced in half lengthwise, then chopped pretty fine., cloves garlic, minced., vegetable stock (If I don't have any, I cheat and use water and 2 veggie bouillon cubes.), can chick peas. (Rinsed), Parsley if you have it.
Vegetarian, vegan if you don't use butter.

1c tomato, chopped, cucumbers, chopped, 1/2/ c green onion, finely chopped, Parsley, snipped ( I usually just dash some dried in instead of fresh), 1T soy sauce, celery seed, 2T lemon juice, 1/4t garlic powder, 1 zucchini, thinly sliced, tomato juice
