Vegan Pumpkin Baked Ziti

Ingredients

  • 1 lbs fake sweet Italian sausage (I use Gimme Lean Sausage from Lightlife)
  • 1 tbsp minced garlic
  • 1 tsp red pepper flakes
  • 4 tbsp oil
  • 1 (15-ounces) can pumpkin puree (or cook and puree fresh pumpkin if you have it in season)
  • 1 c vegetable stock
  • 2 tsp chopped fresh sage leaves
  • 2 tsp salt
  • 1/3 c heavy cream (I use So Delicious Coconut Creamer)
  • 1 lbs whole wheat ziti pasta, cooked
  • 2 tbsp chopped fresh parsley leaves
  • 1 c faux mozzarella (I use Daiya)

Instructions

  1. Preheat oven to 375 degrees F.

  2. Cook sausage in 2 Tbsp of the olive oil, in a large, deep skillet over medium heat for about 8 minutes. Remove from skillet and set aside.

  3. Add garlic, crushed red pepper flakes and additional 2 Tbsp oil to the skillet and cook, stirring occasionally, about 3 minutes. Stir in pumpkin puree, stock and sage. Mix together and add salt.

  4. Bring to a boil then lower the heat and simmer 5 minutes. Stir in cream and sausage. Simmer until the sauce comes together and is thickened slightly.

  5. Add cooked pasta and parsley to the skillet and gently toss all the ingredients together to coat. Add the pasta mixture to a 14" x 8" x 2" baking dish. Sprinkle the fake cheese over the top and bake for 35 minutes.
