Caramelized Onion and Kale Pie
1 bunch kale
1 tomato
1 onion
1 can tomato soup
Olive oil spray
1 tbsp olive oil
Pie crust (preferably whole wheat)
1. Wash kale and tear up. Spray with olive oil and bake at 400 for 5-10 min or until slightly crisped.
1. Slice onion and saute in olive oil until caramelized.
1. Layer ingredients in pie. Bake at 375 for 35-50 min.
Yields: 6 servings
