Foamy Pumpkin Bran Parfaits


  • 4 c cardboardy bran cereal (e.g. Fiber One)
  • 2 c vanilla yogurt
  • 1 c canned or cooked pumpkin puree, refrigerated
  • ¼ c light cream cheese
  • 2 egg whites (use pasteurized if desired)
  • 4 tbsp honey


  1. Using an electric mixer at high speed, whip egg whites and honey until stiff peaks form.

  2. In a larger separate bowl, mix pumpkin puree and cream cheese at medium-high speed. Add egg white mixture to this bowl and lightly mix by hand, just until combined.

  3. Layer bran cereal, yogurt, and pumpkin cheese mixture in clear glasses.
