- 4 c cardboardy bran cereal (e.g. Fiber One)
- 2 c vanilla yogurt
- 1 c canned or cooked pumpkin puree, refrigerated
- ¼ c light cream cheese
- 2 egg whites (use pasteurized if desired)
- 4 tbsp honey
Using an electric mixer at high speed, whip egg whites and honey until stiff peaks form.
In a larger separate bowl, mix pumpkin puree and cream cheese at medium-high speed. Add egg white mixture to this bowl and lightly mix by hand, just until combined.
Layer bran cereal, yogurt, and pumpkin cheese mixture in clear glasses.
