- 3 tomatoes
- 1 Vidalia onion
- 1 can tomato soup
- 2 bratwursts
- 1 ½ tbsp olive oil
- Olive oil cooking spray
- 1/2 lb (1/2 box) vermicelli (thin spaghetti)
- 2 qts water
- ¼ tsp salt
Bring water and salt to a boil. Add pasta and cook 6 minutes or until al dente. Drain.
Chop onion and tomatoes.
Fry bratwursts in olive oil cooking spray until cooked through. Chop into bite-sized chunks.
Heat olive oil in large saucepan. Add onions and cook for 5 minutes or until softened. Add tomatoes and tomato soup. Simmer 1-2 minutes. Add bratwurst pieces. Simmer 5-10 min.
Arrange pasta on plates as nests, leaving room in the middle. Generously ladle sauce into centers of plates.
