Spaghetti With Sweet Sausage-Onion Sauce


  • 3 tomatoes
  • 1 Vidalia onion
  • 1 can tomato soup
  • 2 bratwursts
  • 1 ½ tbsp olive oil
  • Olive oil cooking spray
  • 1/2 lb (1/2 box) vermicelli (thin spaghetti)
  • 2 qts water
  • ¼ tsp salt


  1. Bring water and salt to a boil. Add pasta and cook 6 minutes or until al dente. Drain.

  2. Chop onion and tomatoes.

  3. Fry bratwursts in olive oil cooking spray until cooked through. Chop into bite-sized chunks.

  4. Heat olive oil in large saucepan. Add onions and cook for 5 minutes or until softened. Add tomatoes and tomato soup. Simmer 1-2 minutes. Add bratwurst pieces. Simmer 5-10 min.

  5. Arrange pasta on plates as nests, leaving room in the middle. Generously ladle sauce into centers of plates.
