Lemon-Glazed Tofu

Ingredients

  • 1 (14 ounce) block extra firm tofu, drained and pressed
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp sugar (agave nectar is fine too)
  • 1 tbsp dijon mustard
  • 1 tsp Italian herb blend (basil, thyme, rosemary, oregano)
  • salt and pepper to taste

Instructions

  1. Cut tofu into strips or cubes. Whisk together all other ingredients. Put mixture in a shallow pan or zip-lock bag, and add tofu to coat well.

  2. Allow tofu to marinate for 1 hour+ (the longer the better), turning to coat well with marinade.

  3. Preheat oven to 375 degrees F. Put tofu and marinade in a baking dish, and bake for 25-30 minutes, turning halfway through. Pour extra marinade over the tofu, as needed. Add salt and pepper, to taste.
