Banana, Oatmeal & Cottage Cheese Pancakes


  • 4 egg whites
  • 1 banana
  • ¼ c low fat cottage cheese or fat-free cottage cheese (tofu can be used)
  • ½ c old-fashioned oatmeal, uncooked
  • 1 tsp vanilla extract
  • ¼ tsp ground cinnamon
  • ¼ tsp nutmeg


  1. In a blender or a food processor, blend together all ingredients until smooth.

  2. Slice banana and add slices to batter.

  3. Spray a medium sized skillet with cooking spray and set heat to medium.

  4. Add the pancake batter to skillet and cook until sides are lightly browned.

  5. Top with syrup, butter and/or whatever else you like.
