Very puffy cookies—and they're good for you because they have bananas in them, right?
- 8 tbsp (1 stick) softened butter
- 1 banana
- 1 c sugar
- 2 large eggs
- 2 tsp vanilla extract
- ½ tsp salt
- ½ tsp baking soda
- ¼ tsp baking powder
- 1 c whole wheat flour
- 1 ¼ c white all-purpose flour
- 1 c chopped walnuts
- 1 c chocolate chips
Preheat oven to 375º F.
Mash bananas and beat with softened butter.
Add sugar and mix.
Add remaining ingredients except walnuts and chocolate chips and mix thoroughly.
Stir in walnuts and chocolate chips.
Drop batter onto cookie sheets—1.5 to 2 tablespoons per drop.
Bake at 375º for 12-14 minutes.
