Forget you idea of what potato salad is. This non-traditional potato salad has a Mexican twist that will leave you wanting more.
Ingredients
- 1 large ripe tomato (chopped)
- 3/4 c. chopped green onions (I use the green part)
- 1/4 c. chopped fresh cilantro
- 1 tsp. of salt
- 1 c. Hellman's Mayonnaise
- 3 tbsp. lime juice
- 1 tsp. ground cumin
- 1 lbs small red potatoes, cooked and sliced 1/4 in. thick
- 2 c cubed cooked chicken
- 1 large yellow or red bell pepper, diced
- Tortilla chips (serve with salad)
- Lime slices, whole chili peppers and cilantro sprigs for garnish (optional)
Instructions
-Boil potatoes until soft
-Boil chicken until tender
-In medium bowl combine mayonnaise, lime juice, cumin and 1 teaspoon of salt; set aside.
-In a large bowl combine tomatos, green onions, chopped cilantro, and bell pepper. Then add chicken and potatoes.
-Combine mayonnaise mixture to salad; coat well.
-Cover; chill. To serve, spoon salad onto lettuce-lined platter.
-If desired, garnish with tortilla chips, lime slices, and cilantro sprigs. ENJOY!!!!!!!
