Old-Fashioned Bread Pudding

Old-fashioned taste, less fat and calories

Ingredients

  • 2 c rice milk
  • Egg Replacer equivalent to 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp sugar
  • 4 slices stale bread, cut into 1-in cubes
  • 2 tbsp raisins
  • ½ tsp ground cinnamon

Instructions

  1. Combine rice milk, Egg Replacer, vanilla and sugar in a bowl. Add bread cubes and raisins; stir gently. Pour into a 1-qt baking dish coated with nonstick cooking spray. Sprinkle with cinnamon. Place in a shallow pan; add 1 in. of water. Bake at 350°F for 50 minutes or until a knife inserted near the center comes out clean. Yield: 6 servings.
