- 1 medium potato (8 to 9 oz), cut into chunks
- ¾ c water, plus more
- 2 tbsp butter, in pieces
- ¾ tsp salt
- 1 tbsp sugar
- 3 c flour
- 1 ½ tsp gluten
- 2 ¼ tsp yeast
Combine potato and water in a small saucepan. Simmer covered until the potato is tender. (about 10 min)
Slip off the peels. Mash potato with its water.
Pour potato-water mix into a 2 cup measuring up and add water to make 1 1/3 cup total.
Let potato/water mix cool to room temp
Put ingredients in bread machine (in the order recommended by the machine manufacturer) and run on the white cycle.
