Old- Frashioned Potato Bread

Ingredients

  • 1 medium potato (8 to 9 oz), cut into chunks
  • ¾ c water, plus more
  • 2 tbsp butter, in pieces
  • ¾ tsp salt
  • 1 tbsp sugar
  • 3 c flour
  • 1 ½ tsp gluten
  • 2 ¼ tsp yeast

Instructions

  1. Combine potato and water in a small saucepan. Simmer covered until the potato is tender. (about 10 min)

  2. Slip off the peels. Mash potato with its water.

  3. Pour potato-water mix into a 2 cup measuring up and add water to make 1 1/3 cup total.

  4. Let potato/water mix cool to room temp

  5. Put ingredients in bread machine (in the order recommended by the machine manufacturer) and run on the white cycle.
