Ingredients
- 2 c. rolled oats
- ¾ c. plus 2 Tbs. flour
- 1 tsp. cinnamon
- ¼ tsp. nutmeg
- ⅛ tsp. salt
- ½ c. pure maple syrup
- ½ c. canola oil
- 2 tsp. vanilla extract
Instructions
Preheat oven to 350 degrees F. Place oats in medium saucepan & toast over medium-high heat, stirring frequently until oats are slightly golden & fragrant, about 3 min. Remove from heat & stir in next 4 ingredients. In separate bowl, whisk together syrup, oil & vanilla until combined, then add to oat mixture & stir to combine completely. Dough will be warm. Drop by rounded teaspoonfuls onto baking sheet. Gently flatten dough with wet fingers & bake until golden brown, about 15 min. Cool & store in airtight container.
