Pumpkin Bread

Ingredients

  • 1&1/2 c. brown sugar, packed
  • 1 c. pumpkin puree, canned or cooked
  • 2/3 c. vegetable oil
  • 2 eggs
  • ¼ c. water
  • 2 c. all-purpose flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • ½ tsp. ground nutmeg
  • ½ tsp. cinnamon
  • ½ c. chopped nuts

Instructions

  1. Preheat oven to 350 degrees F. Grease 9X5 loaf pan. In large bowl combine 1st 5 ingredients; blend well. Combine next 6 ingredients; stir into pumpkin mixture & add nuts. Scrape loaf pan. Bake 50-60 min. or until toothpick inserted comes out clean. Remove from pan; cool on rack.
