Rolled Christmas Cookies

A yearly Parker tradition! The anise flavoring gives these cookies a yummy flavor. A nice twist and better than sugar cookies.


Cream together:

  • 2 c. butter or shortening
  • 3 c. brown sugar

Add & Mix:

  • 5 eggs
  • 1 tsp. soda in 2 Tb. water
  • 4 tsp. anise flavoring
  • 1 ½ tsp. vanilla

Mix in just enough flour to make dough the right consistency for rolling:

  • Almost 8 c. flour


  1. Roll dough ¼" thick and cut out shapes with cookie cutters. Bake at 375 degrees for 8-10 minutes. Middles will still be soft. Cool for 10 minutes on cookie sheets, then remove and finish cooling on counter. Frost with frosting below and decorate.


  1. Beat in mixer to soften:

  2. 3 sticks butter or 1 ½ c. shortening

Add a little at a time and mix:

  1. 32 oz. powdered sugar (2 # bag)

  2. 2 tsp. vanilla

  3. Water--start with 2 Tbsp.
