Great for picnics or potluck dinners, this cake with a caramel glaze is simple, delicious, and best of all, easy to transport!
- Basic Buttermilk Cake
- Caramel Glaze:
- ¾ c brown sugar
- 1 ½ c coconut milk or vegan heavy cream
- 1 ½ tbsp vegan butter
- Pinch of salt
Make the batter as directed in the basic cake recipe. Scrape batter into a buttered 9x13x2" pan and spread to edges. Bake at 350Â°F for 25 to 30 minutes, until a toothpick inserted into the center comes out clean. Cool cake completely in pan on a rack.
Place glaze ingredients in a medium saucepan over medium heat. Stir with a wooden spoon and bring to a simmer; then reduce heat slightly.
Simmer for 7 minutes, stirring frequently, until glaze is thickened. Cool until barely warm.
Pour about half the glaze over the top of the cake and spread to edges with a spatula. Drizzle remaining glaze over cut pieces of cake when serving.
Makes one 9x13x2" cake
