I have no idea if this would turn out good or not. But, I might want to try it someday so why not add it....
Ingredients
- ¼ c margarine or butter, softened
- ½ c granulated sugar
- 1 egg
- ¾ c finely shredded carrot (I think that I might try pureed carrot, like baby food, instead 'cause I hate the strings from shredded items in my cakes...)
- ¼ c milk
- ½ tsp vanilla
- 1 c flour
- 1 ¼ tsp baking powder
- ½ tsp ground cinnamon (come on, it is gonna need more than that, right ?)
- ⅛ tsp salt
- sifted powdered sugar
- nonstick cooking spray
Instructions
Preheat oven to 350 deg.
In a medium mixing bowl, beat margarine or butter and sugar until thoroughly combined. Beat in egg. Stir in carrot, milk and vanilla.
In another bowl, combine flour, baking powder, cinnamon, salt, and nutmeg. Add to carrot mixture and stir until thoroughly combined.
Spray an 8X8X2 baking pan with nonstick spray. Pour batter into pan.
Bake for 20 to 25 min or until a toothpick inserted near the center comes out clean.
Cool completely (can take out of pan after 10 min) on wire rack.
Sprinkle with powdered sugar
