Ciabatta

Ingredients

  • 3 ¼ c Poolish
  • 3 c bread flour
  • 1 tsp salt
  • 1 ½ tsp yeast
  • 6 tbsp water (may need more)

Instructions

  1. Make poolish the day before. The morning you are going to make the bread, pull the poolish out, measure out the correct amount, and leave on the counter to warm up for an hour or two.

  2. Stir together, flour, salt, yeast. Add the poolish and the water. Mix. If there is still loose flour, add a little bit more water.

  3. Knead dough. Put in bowl, cover and let rise for 30 min.

  4. Stretch and fold the dough and cover. Let rise for 1 ½ to 2 hours.

  5. Shape dough. Let rise for 45 to 60 min.

  6. Preheat oven to 500 deg

  7. Put bread in. Spray with water. After dough is in, set temp down to 450 deg. Bake for 10 min. Rotate loaves 180 deg. Bake for another 5 to 10 min or until done. (the internal temp will be 205 deg F when done).
