Country White Bread

Ingredients

  • 1 1/3 c water
  • 1 tbsp veggie or olive oil
  • ¾ tsp salt
  • 3 c flour
  • 1 tbsp sugar
  • 3 tbsp dry milk
  • 1 ½ tbsp instant potato flakes
  • 1 tbsp gluten
  • 1 ½ tsp yeast

Instructions

Bread Machine:

  1. Put ingredients in bread machine (in the order recommended by the machine manufacturer) and run on the white cycle.

Stand Mixer:

  1. Put all the ingredients except one half of the flour into the bowl of the stand mixer. Mix together. Slowly add in the remaining flour until it is the correct consistency (you will need to switch to a dough hook or kneed by hand) while the machine is mixing.

  2. Kneed with dough hook (or by hand) for 10 minutes. If the bread starts "climbing" up the hook, stop machine, push the dough back down with spatula, and keep going.

  3. Let dough rise until it has doubled in size, about one hour.

  4. Punch dough down. Let rise again until it has doubled in size, about 1 hour. (if i'm in a rush, I skip this rise.)

  5. Grease one loaf pan (I use spray on veggie oil).

  6. Take dough out, and shape into pan. Let rise until it's a nice loaf shape (somewhere between 20 min and 45 min).

  7. Preheat oven to 350 deg F.

  8. Bake bread for about 30 min until it is done. (Some people "knock" on it to see if it sounds hallow. I can't hear the difference so I use a quick read thermometer to check when the internal temp is above 185 deg.)

Food Processor:

  1. Put all the dry ingredients in the food processor bowl. Pulse once or twice to mix it up.

  2. Turn the FP on. While it is running, slowly add the wet ingredients (water should be added last). Slowly add the water until it is the correct consistency. It will be a gooey ball that "cleans" the bowl as it goes around. (This is much wetter than with a stand mixer.)

  3. Let the machine run for 45 seconds.

  4. Put the dough in a bowl to rise until it doubles in size (about 1 hour).

  5. Punch dough down. Let rise again until it has doubled in size, about 1 hour. (if i'm in a rush, I skip this rise.)
