Pain A L'Ancienne

Ingredients

  • 6 c bread flour
  • 1 ½ tsp salt
  • 1 ¾ tsp yeast
  • 2 ¼ c ice cold water (may need more)

Instructions

  1. Combine flour, salt, yeas and 2 ¼ cups water. Mix. Kneed. It should be sticking to the bottom of the bowl, but release from the sides of the bowl. Add flour/water as needed. Put dough in bowl, cover, and put if the refrigerator overnight.

  2. The next morning, pull the bread dough out. Let it sit on the counter until it loses it's chill.

  3. When the dough has doubled from original size, shape it on a well floured counter.

  4. Preheat oven to 500 deg F.

  5. After putting in the oven, set the temp to 475 deg F. Bake for 18-35 min or until golden brown. Rotate half way though, if needed. It's done when the internal temp is 205 deg F
