Poolish-Style (Sponge) Pre-Ferment

This is a bread sponge or pre-ferment. It does not make a loaf of bread. It is an ingredient in some bread recipes.

Ingredients

  • 4 c flour ( 8 oz)
  • 4 c cool water (65 deg to 70 deg)
  • 1/3 tsp active dry yeast

Instructions

  1. Combine all ingredients

  2. Beat or whisk for about 1 min until the batter is well mixed and quite smooth. (It will resemble pancake batter)

  3. Cover the bowl with plastic wrap and leave at room temp for 3 to 5 hours, or until foamy and bubbly.

  4. Refrigerate well covered overnight.

  5. Make it 1 to 3 days ahead of time.
