This is a bread sponge or pre-ferment. It does not make a loaf of bread. It is an ingredient in some bread recipes.
- 4 c flour ( 8 oz)
- 4 c cool water (65 deg to 70 deg)
- 1/3 tsp active dry yeast
Combine all ingredients
Beat or whisk for about 1 min until the batter is well mixed and quite smooth. (It will resemble pancake batter)
Cover the bowl with plastic wrap and leave at room temp for 3 to 5 hours, or until foamy and bubbly.
Refrigerate well covered overnight.
Make it 1 to 3 days ahead of time.
