A quick yummy fall roll. I normally do a double batch.
Ingredients
- 1 ¾ c all purpose flour (can do half whole wheat)
- 1 tsp baking powder
- ¼ tsp baking soda
- ⅛ tsp salt
- ¼ tsp ground nutmeg
- ¾ c canned pumpkin (about 1/2 small a small can)
- 3 tbsp cooking oil
- 2 tbsp brown sugar
- 2 tsp sugar (for topping)
- 1 tbsp cinnamon, plus more for topping
Instructions
Preheat oven to 400 deg F
In a medium mixing bowl combine flour, baking powder, baking soda, nutmeg, salt and cinnamon. (If doing a double batch, you need a big bowl. )
In a small mixing bowl, combine pumpkin, oil, and brown sugar.
Add pumpkin mix to dry mix, stirring with a fork until combined.
Turn dough onto lightly floured surface.
Shape into rolls. Smaller rolls are better.
Put rolls onto a large baking sheet linned with foil.
Combine sugar and cinnamon. Sprinkle over rolls.
Bake for 9 to 11 min or until golden brown.
Serve warm !
