this is my mom's xmas sugar cookie that we had all the time as kids growing up. It can be rolled out or used in a cookie press.
- ¼ cup of shortening
- ½ cup of butter (soften)
- 1 c plus 3 tablespoons of sugar
- 2 eggs whites plus one whole egg
- 1 tsp if vanilla extract
- 2 ½ cups of all purpose flour
- 1 tsp of baking powder
- 1 tsp of salt
Gently whip the eggs whites. You do not want them stiff, just slightly foamy. Add the whole egg and sugar. Beat. Add shortening, butter, and flavoring. Beat. Add baking soda and salt. Beat. Gentle blend in flour.
Bake at 375 for 6 to 8 minutes. To make this roll out cookie cutter cookies divide dough in half and refrigerate for at least one hour.
