Bohemian Rye Bread

Ingredients

Sponge::

  • 1 cake compressed yeast
  • 1 c lukewarm water
  • 1 c rye flour
  • 1 Tbsp. lard
  • 1 tbsp caraway seeds
  • 3 c lukewarm water
  • 2 tbsp salt
  • 10 c rye flour (approximately)
  • Dissolve yeast in 1 cup of lukewarm water, add 1 cup of rye flour and blend. Let stand several hours or overnight

Instructions

  1. Add rest of water and salt and blend

  2. Add flour to make stiff dough

  3. Knead until dough no longer sticks to hands

  4. Put in bowl and let rise until double

  5. Punch down, form into round loaf and put on greased cookie sheet that has been sprinkled with cornmeal.

  6. Brush lightly with egg white

  7. Let rise again

  8. Bake 450⁰ 10 minutes then 350⁰ for 1 hour or until done.
