Cream Cheese Cranberry Muffins

Ingredients

  • 1 c butter, softened
  • 1 package (8 oz) cream cheese, softened
  • 1 ½ cups sugar
  • 1 ½ tsp vanilla extract
  • 4 eggs
  • 2 c all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 c fresh or frozen cranberries
  • ½ cup chopped pecans

Instructions

  1. In large mixing bowl, cream butter, cream cheeses, sugar and vanilla.

  2. Add eggs, one at a time beating well after each addition

  3. Combine the flour baking powder and salt

  4. Stir into creamed mixture just until moistened

  5. Fold in cranberries and pecans

  6. Fill greased or paper-lined muffin cups ¾ full

  7. Bake at 350⁰ for 20-25 minutes or until a tooth pick come out clean

  8. Cool for 5 minutes before refrigerating
