Rhubarb Custard Dessert

Ingredients

Crust:

  • 1 ¼ cup flour
  • 2 ½ Tbsp sugar
  • ¾ cup butter
  • Filling:
  • 2 ½ cup sugar
  • ½ cup flour
  • 4 eggs
  • 1 ¼ cup whipping cream
  • 6 ¼ cup rhubarb
  • Topping:
  • 1 ¼ cup whipping cream (or 2 cups cool whip)
  • 10 oz cream cheese
  • ¾ cup sugar
  • ¾ tsp vanilla

Instructions

  1. Mix crust well

  2. Bake at 350० for 10 minutes in a 9x13 glass pan

  3. Filling:

  4. Combine sugar and flour

  5. Whisk in eggs andcream

  6. Stir in rhubarb

  7. Pour over crust

  8. Bake at 350० for 1 hour or until set

  9. Check by inserting knife until knife comes out nearly clean

  10. cool

  11. Topping:

  12. Whip cream and set aside

  13. Beat remaining ingredients until smooth

  14. Fold in whipped cream

  15. Spread over top

  16. Refrigerate
