Ingredients
Crust:
- 1 ¼ cup flour
- 2 ½ Tbsp sugar
- ¾ cup butter
- Filling:
- 2 ½ cup sugar
- ½ cup flour
- 4 eggs
- 1 ¼ cup whipping cream
- 6 ¼ cup rhubarb
- Topping:
- 1 ¼ cup whipping cream (or 2 cups cool whip)
- 10 oz cream cheese
- ¾ cup sugar
- ¾ tsp vanilla
Instructions
Mix crust well
Bake at 350० for 10 minutes in a 9x13 glass pan
Filling:
Combine sugar and flour
Whisk in eggs andcream
Stir in rhubarb
Pour over crust
Bake at 350० for 1 hour or until set
Check by inserting knife until knife comes out nearly clean
cool
Topping:
Whip cream and set aside
Beat remaining ingredients until smooth
Fold in whipped cream
Spread over top
Refrigerate
