Sara’S Mint Cookies

Ingredients

  • ¾ cup butter
  • 1 ½ cup brown sugar
  • 2 tbsp water
  • 2 c semi-sweet chocolate chips
  • 2 eggs
  • 2 ½ cups flour
  • 1 ¼ tsp baking soda
  • ½ salt
  • 3 (4.5 oz) packages Andes Mints

Instructions

  1. Combine butter, water and sugar in a saucepan

  2. cook on medium heat until melted

  3. Removed from heat and stir in chocolate chips until melted

  4. set aside to cool for 10 minutes

  5. Pour chocolate mixture into a large bowl and beat in eggs one at a time

  6. Combine dry ingredients then add to chocolate mixture

  7. cover and refrigerate for 1 hour

  8. Form dough into walnut size balls and put on greased cookie sheet

  9. Bake at 350० for 8-10 minutes

  10. will be puffy, wait a minute until deflates then put a mint on top
