Zucchini Carrot Cake

Ingredients

  • 3 eggs
  • 1 ½ cup sugar
  • 1 c oil
  • Skimpy 2 cups flour
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 ½ tsp cinnamon
  • ¾ tsp salt
  • 1 ½ cup graded carrots
  • 1 ½ cup graded zucchini
  • Optional
  • 1 c raisins
  • 1 c walnuts

Instructions

  1. Beat eggs, add in sugar, beat til frothy.

  2. Gradually beat in oil and add dry ingredients

  3. Stir in remaining ingredients

  4. Bake at 350⁰ for 35 to 40 minutes until springs back
