I want a spicy chicken salad that I can eat on bib lettuce. The oil from the giardiniera will add fat, so reduce fat by using plain yogurt. I want a lot of crunch, so may need to make a slightly milder giardiniera for this so I can still add a lot.
- red onion/scalions
- celery (already in giardiniera, maybe add more to the giardiniera when making?)
- pearl moz or Fetta?
