Chili

Ingredients

  • 1lb Ground Beef
  • 2 Garlic Cloves (minced)
  • 1/2 an Onion (diced)
  • 1-2 Jalapenos (diced)
  • 1T Chili Powder
  • 2t Ground Cumin
  • 1/2t Black Pepper
  • 1/8t Dried Oregano
  • 1/8t Dried Basil
  • 1/8t Dried Thyme
  • 1/4t Ground Coriander
  • 8oz Stout/Porter
  • 8oz water
  • 1 can Tomato Sauce
  • 2 Beef Bullion Cubes
  • 2T Balsamic Vinegar
  • 1T Dark Muscovado or Brown Sugar
  • 1/4t Unsweetened Cocoa Powder

Optional:

  • 1 Can Butter Beans
  • 1 Can Dark Red Kidney Beans
  • 1 Can Pinto Beans

Instructions

  1. Heat a large pot over high

  2. Brown beef

  3. Reduce heat to medium and remove beef with a slotted spoon

  4. Saute Onions over medium heat until tender (about 5 minutes)

  5. Add Garlic and Jalapenos and continue to cook for 2-3 minutes

  6. Add back the Beef, plus the Chili Powder, Cumin, Pepper, Oregano, Basil, Thyme and Coriander and cook for 1-2 min

  7. Deglaze with Beer

  8. Add water, Tomato Sauce, Bullion, Vinegar, Sugar, and Cocoa Powder

  9. Bring to a boil, cover and lower to simmer

  10. Cook till done

  11. Optional: add beans 15 minutes before serving.
