Chili

Ingredients

Meat and veggies:

  • 1lb Ground Beef
  • 1/2 an Onion (diced)
  • 1-2 Jalapenos (diced)
  • Optional - 1/2 C salsa (when lazy and don't want to dice onions jalapenos, this works well. Reduce tomato sauce by half)
  • 2 Garlic Cloves (minced)

Dry Seasonings:

  • 1 tbsp Chili Powder
  • 2 tsp Ground Cumin
  • ½ tsp Chipotle Chili Powder
  • ½ tsp Black Pepper
  • tsp Dried Oregano
  • tsp Dried Basil
  • tsp Dried Thyme
  • ¼ tsp Ground Coriander
  • ¼ tsp Unsweetened Cocoa Powder
  • 1 tbsp Dark Brown Sugar
  • 2 Beef Bullion Cubes
  • 2 tbsp Balsamic Vinegar

Liquid:

  • 8oz Stout/Porter
  • water
  • 16oz Tomato Sauce

Beans:

  • 1 Can Butter Beans (rinsed)
  • 1 Can Dark Red Kidney Beans (rinsed)
  • 1 Can Pinto Beans (rinsed)

Instructions

  1. Heat a large pot over medium high

  2. Brown beef

  3. If not cooking onions/peppers, skip to adding spices. Else...

  4. Reduce heat to medium and remove beef with a slotted spoon

  5. Saute Onions over medium heat until tender (about 5 minutes)

  6. Add Garlic and Jalapenos and continue to cook for 2-3 minutes

  7. Add back the Beef increase to medium high

  8. Add all dry seasonings and cook for 1-2 min over medium high to allow spices to toast and sugar to carmelize

  9. Add balsamic vinegar and cook for 30sec to 1 min

  10. Deglaze with Beer ( adding a little at a time and scrape up bits. Continue adding slowly to allow beer to reduce.

  11. Add Tomato Sauce

  12. Optional add salsa

  13. Add 8-12 oz water to get to consistency, bearing in mind that beans will be added later

  14. Bring to a boil, reduce to low simmer

  15. Cook for 30min or as long as you want

  16. Add beans 30 minutes before serving, increase heat to low simmer.
