Indian Turkey And Potato Bowl

Quick, healthy Indian fix with no need for rice. Works well with Chicken or Turkey.

Ingredients

  • 3 tbsp oil
  • 1 lb ground turkey or chicken
  • 1 chopped onion
  • 1 tsp Salt or to taste
  • 1-inch piece of peeled ginger, grated (or 1/4-1/2 tsp ground ginger)
  • 2 minced garlic cloves
  • ½ c water
  • 1 tbsp garam masala
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 large Sweet potato (or 2 Yukon Gold), peeled and cut into 1-inch chunks
  • 1 can chickpeas
  • 2-4 Roma/plum tomatoes, diced (optional)
  • 1 c fresh or frozen peas
  • ½ c chopped cilantro

Instructions

  1. Oil pan and heat over medium high

  2. Brown Turkey (Hint: spread it out by pressing into pan and don't stir it until it begins to brown)

  3. Add Onion and saute for 5 minutes

  4. Sprinkle with 1 tsp Salt

  5. Add Ginger and Garlic and saute 2 minutes

  6. Add Water, Spices and Potatoes. Stir to combine and cover. Turn heat down to medium-low and simmer for 10-15 minutes, or until potatoes are tender.

  7. Stir in Chickpeas, Tomatoes(optional), and Peas, cover and continue to simmer 3 minutes

  8. Serve topped with fresh Cilantro
