Quick, healthy Indian fix with no need for rice. Works well with Chicken or Turkey.
Ingredients
- 3 tbsp oil
- 1 lb ground turkey or chicken
- 1 chopped onion
- 1 tsp Salt or to taste
- 1-inch piece of peeled ginger, grated (or 1/4-1/2 tsp ground ginger)
- 2 minced garlic cloves
- ½ c water
- 1 tbsp garam masala
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp ground coriander
- 1 large Sweet potato (or 2 Yukon Gold), peeled and cut into 1-inch chunks
- 1 can chickpeas
- 2-4 Roma/plum tomatoes, diced (optional)
- 1 c fresh or frozen peas
- ½ c chopped cilantro
Instructions
Oil pan and heat over medium high
Brown Turkey (Hint: spread it out by pressing into pan and don't stir it until it begins to brown)
Add Onion and saute for 5 minutes
Sprinkle with 1 tsp Salt
Add Ginger and Garlic and saute 2 minutes
Add Water, Spices and Potatoes. Stir to combine and cover. Turn heat down to medium-low and simmer for 10-15 minutes, or until potatoes are tender.
Stir in Chickpeas, Tomatoes(optional), and Peas, cover and continue to simmer 3 minutes
Serve topped with fresh Cilantro
