Gluten free, dairy free, seed, nut, and fruit bars
- 1 c raw sunflower seeds
- ½ c raw pumpkin seeds
- ½ c unsweetened shredded coconut
- 1/3 c raisins, craisins, or other dried fruit (apricots, banana chips, apples)
- ¼ c sesame seeds
- 1/3 c dry roasted almonds, pistachios, or mixture of both coarsely chopped
- 2 tbsp ground flax
- ¼ c brown rice syrup
- ¾ tsp cinnamon
- 2 tsp vanilla
- 1 tsp salt
- Puffed rice
- Gluten free rolled oats
- Semi sweet chocolate chips
- Cocoa Powder
- Pumpkin pie spice
- Peanut butter?
- Apple sauce?
Preheat oven to 325
Toast coconut, and any raw seeds in the oven. (around 10 minutes. coconut may take less)
Add to a bowl with all other dry ingredients.
Warm syrup in the microwave
Drizzle syrup over mixture while mixing with your hand.
Line a pan or cookie sheet with wax paper and press mixture into pan. Mixture should be less than ⅜" thick once pressed.
Bake for 8 minutes or until browning begins.
Cool on a rack and then break into chunks or bars.
Keep refrigerated for up to one week or frozen for up to 2 months.
