Ingredients
- 6 strips bacon diced
- 3 medium sweet potatoes (about 8 ounces each) peeled and 1/4-inch diced
- 1 large onion chopped
- 1 clove garlic minced
- 2 tbsp pickled jalapenos, chopped
- ½ tsp ground cumin
- Salt and freshly ground black pepper
- ½ c Frozen Spinach thawed and drained
- ½ c uncooked quinoa
- ¼ c Brown sugar
- 8 eggs
Instructions
Cook bacon on medium
add potatoes and cook
add onion and jalapeno and cook
add cumin salt and pepper
cook down
mix in spinach and remove from heat
pour rinsed quinoa into casserole dish
dust with brown sugar
spread hash in the dish
pour eggs over
