Turkey Meatball Grinders

Zesty meatballs with marinara and provolone. Also great as a meatloaf using optional Meatloaf Sauce. Just spread on the sauce after 30 minutes in the oven at 350 degrees, cook for 10 more minutes, add provolone slices, and broil till done.

  • 1/3 of an Onion
  • 1/2 of a Medium Carrot
  • 1/3 of a Red Bell Pepper
  • 3 Cloves of Garlic peeled
  • ½ c Panko Breadcrumbs
  • ¼ tsp Black Pepper
  • ¼ tsp Cayenne
  • ¼ tsp Chili Powder
  • ¼ tsp Dried Basil
  • ¼ tsp Dried Thyme
  • ¼ tsp Kosher Salt
  • 2 tsp Worcestershire Sauce
  • 1 Egg
  • 1 lb Ground Turkey
  • Hoagie buns
  • Provolone cheese slices
  • Marinara sauce

Meatloaf Sauce (Optional):

  • This was made to taste, so start off with less seasoning and add to taste. Flavors will intensify when cooking.
  • ½ c Ketchup
  • ½ c Tomato Sauce
  • 2 Dashes Worcestershire Sauce
  • ¼ tsp Dried Marjoram
  • ¼ tsp Ground Oregano
  • ¼ tsp Dried Thyme
  • ¼ tsp salt

  1. Add peeled garlic to food processor and pulse a few times. Then add Onion, Carrot, and Red Bell Pepper to food processor and pulse until finely minced, but not into a paste.

  2. Mix together breadcrumbs, black pepper, cayenne, chili powder, dried basil, dried thyme, and kosher salt in a bowl.

  3. Add ground turkey to a bowl and lightly pull apart with a fork.

  4. Pour vegetable and breadcrumb mixture over the ground turkey.

  5. Whisk together egg and worcestershire, add to turkey mixture, and gently mix together.

  6. Roll into one inch meatballs and place onto a broiler pan.

  7. Note: Wetting one's hands makes rolling meatballs a snap.

  8. Broil meatballs 6 inches from heat source for 6-8 minutes. Turn meatballs and continue to broil for an additional 3-4 minutes or until done.

  9. Heat marinara sauce in a large skillet.

  10. Transfer meatballs into marinara. Cover and cook for 10-15 minutes

Assemble sandwiches on a cookie sheet or reuse the broiler pan:

  1. Slice hoagie rolls open

  2. Ladel a small amount of sauce into each roll

  3. Add meatballs

  4. Lay provolone slices over the top of the meatballs

  5. Place back under the broiler for a few minutes to melt cheese and toast rolls.
