Crock Pot Minestrone Soup

A simple vegan minestrone soup.


  • 1 c corn
  • 1 lb cooked chickpeas
  • ½ c minced onion
  • 1 clove garlic, minced
  • ½ c diced carrots
  • ½ c diced celery
  • 1 pkg frozen chopped spinach
  • 10 oz can tomatoes
  • 1 med potato, diced
  • 2 tbsp parsley
  • 1 qt vegetable broth
  • ½ c elbow macaroni


  1. Combine all ingredients except macaroni in crock pot. Add water if vegetable broth does not completely cover.

  2. Cook on high 1 hour, then switch to low for 6-8 hours. If you don't have time just cook on low 9-10 hours.

  3. One hour before serving, add macaroni. I found it necessary to turn back up to high for the final hour to cook the potato and macaroni through.
