Chicken Fried Rice

One of my favorite recipes

Ingredients

  • 4 c cold cooked rice
  • 8 oz cooked chicken -chopped
  • 2 eggs
  • ½ c green peas
  • 1 medium onion, diced
  • 1 can water chestnuts-drained
  • 1 green onion, diced
  • Seasonings
  • Soy Sauce
  • salt
  • pepper
  • oil for stir-frying as needed

Instructions

  1. Beat the eggs.

  2. Chop chicken and vegetables

  3. Heat wok or LARGE frying pan and add oil.

  4. Pour half the egg and cook turning once. Repeat with other half. Cut into thin strips and save for later.

  5. Stir-fry the onion on med-high heat for a few minutes, set aside and do the same for the peas and water chestnuts.

  6. Add oil, turn heat down and add brown rice.

  7. add salt and pepper and whatever other seasoning you like.

  8. Add the chicken, peas, onions, chestnuts, and egg

  9. allow to heat thoroughly

  10. Serve with soy sauce

  11. you can also, use the green onion and egg as a garnish
