Rhubarb Cake

Ingredients

  • Beat with electric hand mixer
  • 1 c brown sugar
  • ½ cup white sugar
  • ½ cup butter
  • 1 egg
  • 1 c buttermilk
  • Mix together and add to above mixture
  • 2 c flour
  • 1 tsp soda
  • 1 tsp cinnamon
  • dash salt
  • Topping
  • ¼ cup sugar
  • 1 tsp cinnamon
  • ¼ - 1/3 cup chopped walnuts or pecans
  • 2 c rhubarb
  • Fold into cake mixture

Instructions

  1. Pour into greased 9x13 pan and sprinkle with topping

  2. Bake at 350⁰ for 35-40 minutes or until tests done with toothpick
