Tomato Pie


  • 6 sliced tomatoes (or 2 1/2 large)
  • ¾ c mayonnaise
  • 1 c parmesan cheese
  • 1 c mozzarella cheese
  • basal leaves
  • pie crust


  1. Start with a pie crust (you may use store bought or homemade- I use ½ recipe of pie crust no fail)

  2. slice tomatoes to cover bottom of pie crust

  3. Mix together mayonnaise, and cheese

  4. spread half of mix over tomatoes

  5. place basal leaves on top

  6. repeat with rest of ingredients

  7. Bake at 350 degrees for 25-30 minutes or until crust is golden brown

  8. Let sit to solidify for at least 30 minutes

  9. Serve warm
