nicely seasoned; options and additions make it a delight to serve
- 4 c bite-size pieces of cooked chicken
- 2 tsp grated onion or chopped scallions (optional)
- 1 c thinly sliced celery
- 2/3 c mayonnaise
- 1/4 heavy cream
- 2 tbsp vinegar
- ⅛ tsp freshly ground pepper
- Salt to taste
- Romaine lettuce
Put the chicken in a bowl and add the onion or scallions (if you like) and celery. Combine the mayonnaise, cream and vinegar and blend well. Add pepper and salt, and toss with the chicken until well mixed. Make a bed of the lettuce leaves and spoon the chicken salad over them.
Variations and Additions:
Sprinkle 1 cup chopped almonds over salad.
Instead of the celery, add 1 cup seedless grapes to chicken mixture.
Add 2 teaspoons curry powder to the mayonnaise.
Omit the celery and add ½ cup peeled, seeded, diced cucumber and ½ cup pineapple bits.
Add 1 cup diced, unpeeled red apple and ½ cup chopped walnuts.
