Energy Pancakes

Very filling and substantial

Ingredients

  • 1 egg
  • 2 tbsp honey (optional)
  • 1 tbsp baking powder
  • ¼ tsp vanilla
  • ¼ c raisins
  • ¼ c sesame seeds
  • ¼ c bran or ground flax seed
  • 2 ½ c milk
  • 1 ¼ c flour or 3/4 cup flour and 1/2 cup Shaklee soy protein mix
  • 2 tbsp oil
  • ¾ c rolled oats
  • ¼ c sunflower seeds
  • ¼ c wheat germ or ground flax seed
  • 1 apple, shredded

Instructions

  1. In a large bowl, combine egg, milk and honey. Sift flour with baking powder and add to egg mixture along with oil and vanilla and blend well.

  2. Mix in oats, raisins, sunflower seeds, sesame seeds, wheat germ, bran and shredded apple. Refrigerate over night.

  3. In morning spoon batter on hot griddle. Cook until browned, turn and cook other side.

  4. Batter keeps about a week.

  5. Serve with applesauce or fresh fruit.
