I adapted a mac and cheese recipe that I liked to make something a little different. The outcome was quite tasty. It's creamy and flavorful.
- 2 c (dry) rice
- 2 c Ham (diced)
- 2 ½ tbsp butter
- 2 tbsp flour
- 1 tbsp powdered mustard
- 2 c milk
- 1-2 tablespoons dried, minced onions
- ½ tsp paprika
- 1 large egg
- 12 oz shredded cheese (I used sharp cheddar, Italian blend and Colby Jack)
Make rice as directed.
Brown the bits of ham in a separate pan.
In another, much larger pan, melt the butter. Whisk in the flour and mustard and keep it moving. Stir in the milk, onion, and paprika. Make sure it's free of lumps by incorporating everything slowly while stirring.
Temper in the egg. Stir in the shredded cheese. Season with salt and pepper to taste. Fold the rice and ham into the mixture. Let rest for five minutes before serving.
